“El Hijo del Rubio” has experience in preparing dishes for celiac, ensuring the two fundamental premises:

• Discard any product that has as an ingredient WHEAT, SPELT, BARLEY, RYE and OATS.
• Discard any products derived from these cereals: starch, flour, bread, pasta, and cakes.

Although it seems simple, in fact it represents a challenge for cooks who need to develop this type of menus, because of the responsibility that entails.
El Hijo del Rubio proceed to read food labels and discard those that don’t provide reliable information for the Celiac and ensure non-contamination of foods that originally don’t contain gluten.
El Hijo del Rubio bets on natural foods: milk, meat, fish, eggs, fruits, vegetables, legumes and cereals made without gluten (rice and maize) and avoiding those manufactured products by the industry in which we don’t have total warranties of its composition and elaboration, because the ingestion of small amounts of gluten can cause lots of problems to celiac.
That’s the reason why we have to:

  • Separate always the food for celiac, to avoid confusion, producing and elaborating food for celiac, always separated from the rest.
  • Ensure that the raw products are gluten-free, avoiding the handmade and not labeled food, because we cannot check the list of ingredients.
  • Consult Celiac Associations, checking the list of 'gluten free' brands.
  • Be aware of the preparation of dishes for celiac.
